Miss Carroll’s Birthday Brownies for Paul

It’s Paul’s birthday and what better way to celebrate than with birthday brownies!!

Stonewall Kitchen’s brownie mixes are exceptional. I added about one cup of halved pecans, two tablespoons of San Saba River Pecan Company Cherry Pecan Preserves, and one cup of semi-sweet chocolate chips to the mixture. Double the chocolate with pecans makes these brownies even more delicious! The cherry preserves add a sweet surprise flavor to the brownies.

I added my go-to cocoa butter icing and more halved pecans to top off these yummy brownies!

Cooking Tools

  • Stonewall Kitchen Brownie Mix
  • Ingredients needed for the mix
  • Mixing bowl
  • 8 x 10-inch baking pan

Brownie Directions

  • Mix the Stonewall Kitchen Brownie Mix as directed on the box.
  • Add 1 cup of halved pecans to the mixture.
  • Add 1 cup of semi-sweet chocolate chips.
  • Add 2 tablespoons of San Saba River Pecan Company Cherry Pecan Preserves.
  • Add 1 teaspoon of vanilla extract.
  • Bake as directed on the box.
  • Let cool completely before icing the brownies.

Cocoa Buttercream Icing Directions

  • 1 ½ cups butter, softened but not melted
  • 3 cups powdered sugar
  • ¾ cup unsweetened baking cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon San Saba River Pecan Company Cherry Pecan Preserves
  • In a mixing bowl, beat the cocoa buttercream icing ingredients with an electric mixer on medium speed until smooth and spreadable. Spread over cooled brownies and add halved brownies.
  • Cut brownies and enjoy with ice cream and San Saba River Pecan Company Cherry Pecan Preserves.
