Miss Carroll’s Chocolate Chip Scones using Stonewall Kitchen Pancake Mix

Miss Carroll’s chocolate chip scones are made using Stonewall Kitchen Pancake Mix. Using pancake mix for the dry base provides a tender texture for the scones and enough body to hold the shape together while baking. Serve as an afternoon snack, breakfast treat and with your favorite hot drink!

Scones with Pancake Mix Ingredients

  • 2 cups Stonewall Kitchen Pancake and Waffle Mix from Guess and Company
  • 1 teaspoon baking powder
  • 1 1/2 tablespoons sugar
  • 1/2 cup heavy cream +2 tablespoons
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup chocolate chips
  • Raw sugar for sprinkling the scone tops

Scone Glaze Icing Ingredients

  • Glaze Icing (double this is you want a lot of glaze icing)
  • 1/2 cup powdered sugar
  • 1 tablespoon warm water

Scones with Pancake Mix Directions

  • Preheat oven to 400°
  • In a medium bowl mix the Stonewall Kitchen pancakes mix, baking powder, sugar together with a whisk, this will lighten up the pancake mix and make it all fluffy.
  • Then add in the heavy cream, egg, and vanilla and mix just until half combined.
  • Then add in the chocolate chips and continue mixing until the batter is just combined, it will not be smooth. (by not over mixing the dough the scones will be fluffy otherwise they'll be tough)
  • Pat the mixture into a circle in a skillet or on a parchment-lined baking pan and score it into 8 pieces with a knife or pastry cutter.
  • Brush the top of the batter with the remaining 2 tablespoons of heavy cream
  • Sprinkle raw sugar on the tops of each triangle.
  • Refrigerate for 30 minutes, then bake immediately. This helps hold the triangular shape together and prevents spreading while baking.
  • Bake for 12-20 minutes.
  • Scones will be nicely golden brown.
  • Mix the icing of powdered sugar and warm water until smooth.
  • Drizzle glaze icing over warm scones.
